How To Make Slow Cooker Lamb Shanks

Serves:

Ingredients

  • 4 lamb shanks
  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 stalks of celery, sliced
  • 1 cup of beef broth
  • 1 cup of red wine
  • 2 tablespoons of tomato paste
  • 2 sprigs of rosemary
  • 2 sprigs of thyme
  • Salt and pepper to taste

Instructions

  1. Season the lamb shanks with salt and pepper.

  2. In a skillet, heat some oil and sear the lamb shanks until browned on all sides. Transfer to the slow cooker.

  3. In the same skillet, sauté the onion, garlic, carrots, and celery until softened. Add to the slow cooker.

  4. In a bowl, whisk together the beef broth, red wine, and tomato paste. Pour over the lamb shanks in the slow cooker.

  5. Add the rosemary and thyme sprigs to the slow cooker.

  6. Cover and cook on low heat for 8 hours or until the lamb is tender and falling off the bone.

  7. Remove the lamb shanks from the slow cooker and strain the liquid into a saucepan.

  8. Reduce the liquid over medium heat until thickened to your desired consistency. Season with salt and pepper if needed.

  9. Serve the lamb shanks with the reduced sauce and your choice of sides.
