How To Make Salmon with Leeks & Parsnip Mash

Ingredients
- 4 salmon fillets
- 2 leeks, thinly sliced
- 4 parsnips, peeled and chopped
- 2 tablespoons of olive oil
- Salt and pepper, to taste

Preheat the oven to 400°F (200°C).

Season the salmon fillets with salt and pepper. Place them on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until cooked to your desired level of doneness.

Meanwhile, heat the olive oil in a large skillet over medium heat. Add the sliced leeks and cook for 5 minutes, until softened.

In a separate pot, bring water to a boil. Add the chopped parsnips and cook for 10-12 minutes, until tender. Drain and transfer the parsnips to a mixing bowl.

Use a potato masher or a fork to mash the parsnips until smooth. Season with salt and pepper to taste.

To serve, divide the leeks between four serving plates. Place a scoop of the parsnip mash on top of the leeks and then top each plate with a salmon fillet.
