How To Make Pork & Pepper Meatballs on Parsnip Mash

- 500g ground pork
- 1 red bell pepper, finely chopped
- 1/2 onion, finely chopped
- 1 garlic clove, minced
- 2 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp breadcrumbs
- 2 eggs
- 2 tbsp olive oil
- 4 parsnips, peeled and chopped
- 2 tbsp butter
- 1/4 cup milk
- Salt and pepper to taste

In a large bowl, mix together the ground pork, red bell pepper, onion, garlic, paprika, dried oregano, salt, black pepper, breadcrumbs, and eggs.

Form the mixture into small meatballs.

Heat the olive oil in a skillet over medium heat. Add the meatballs and cook until browned and cooked through, about 10-12 minutes.

Meanwhile, boil the parsnips in a pot of water until tender. Drain and return to the pot.

Mash the parsnips with the butter and milk until smooth. Season with salt and pepper.

Serve the meatballs on top of the parsnip mash.
