Ingredients

  • 4 salmon fillets
  • 2 leeks, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup white wine
  • Lemon wedges, for serving

Instructions

  1. In a large skillet, heat the olive oil and butter over medium heat.

  2. Add the sliced leeks and minced garlic, sauté until softened, about 5 minutes.

  3. Push the leeks to the side of the skillet and place the salmon fillets in the center. Season with dried dill, salt, and black pepper.

  4. Pour in the chicken broth and white wine. Bring to a simmer and cover the skillet. Cook for 10-12 minutes, or until the salmon is cooked through.

  5. Serve the salmon and leeks with the cooking liquid spooned over the top. Garnish with lemon wedges.
