How To Make Braised Chicken with Olives and Tomatoes

Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 cup cherry tomatoes
- 1/2 cup pitted olives
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions

Season the chicken thighs with salt and pepper.

In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Cook until the onion becomes translucent.

Add the cherry tomatoes, olives, chicken broth, dried thyme, and dried oregano to the skillet. Stir well to combine.

Return the chicken thighs to the skillet, nestling them into the tomato mixture. Cover the skillet and simmer for 45 minutes, or until the chicken is cooked through and tender.
