Total: 55 minutes

Serves:

Ingredients

  • 4 gammon steaks
  • 2 leeks, sliced
  • 1 celeriac, peeled and diced
  • 2 apples, peeled, cored, and diced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Season the gammon steaks with salt and pepper.

  3. Heat the olive oil in a large skillet over medium heat. Sear the gammon steaks on both sides until golden brown. Transfer to a baking dish and bake in the preheated oven for 15-20 minutes, or until cooked through.

  4. In the same skillet, melt the butter and add the sliced leeks and minced garlic. Cook until the leeks are soft and translucent.

  5. Meanwhile, steam the diced celeriac until tender.

  6. In a separate saucepan, combine the diced apples and chicken broth. Simmer over medium heat until the apples are soft and the broth has reduced.

  7. Drain the celeriac and mash it with the cooked leeks. Season with salt and pepper to taste.

  8. Serve the gammon steaks on top of the leek and celeriac mash, and drizzle with the apple sauce.
