How To Make Curried Parsnip Mash

Ingredients
- 4 parsnips, peeled and chopped
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon curry powder
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 1/2 cup vegetable broth
- 1/2 cup coconut milk
Instructions

In a large pot, bring water to a boil and add the chopped parsnips. Cook for about 10-15 minutes or until tender. Drain and set aside.

In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.

Stir in the curry powder, turmeric, salt, and pepper, and cook for an additional 2 minutes to release the flavors.

Add the cooked parsnips, vegetable broth, and coconut milk to the pan. Mash the mixture with a potato masher until smooth and creamy.
