How To Make Pad Thai with Prawns

Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 1 lb prawns, peeled and deveined
  • 2 cloves garlic, minced
  • 1 shallot, thinly sliced
  • 2 eggs, beaten
  • 2 tbsp fish sauce
  • 1 tbsp tamarind paste
  • 1 tbsp brown sugar
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 1/4 cup chopped peanuts
  • Lime wedges, for serving
  • Fresh cilantro, for garnish

Instructions

  1. Soak rice noodles in hot water for 10 minutes until soft. Drain and set aside.

  2. In a large wok or skillet, heat vegetable oil over medium-high heat. Add prawns, garlic, and shallot. Stir-fry until prawns are cooked, about 3-4 minutes. Remove prawns from the pan and set aside.

  3. Push ingredients to one side of the pan and pour beaten eggs into the other side. Scramble the eggs until cooked through.

  4. Add the soaked rice noodles to the pan and stir-fry for 2-3 minutes to heat through.

  5. In a small bowl, mix together fish sauce, tamarind paste, and brown sugar. Pour the sauce over the noodles in the pan and stir-fry for another 2-3 minutes.

  6. Add bean sprouts, green onions, and cooked prawns back into the pan. Toss everything together until well combined.

  7. Serve pad Thai with prawns hot, garnished with chopped peanuts, lime wedges, and fresh cilantro.
