How To Make Smoked Fish & Potato Latkes Sharing Platter

- 4 medium potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs, beaten
- 3 tbsp all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- Vegetable oil for frying
- 8 oz smoked fish (such as salmon or trout)
- 1/2 cup sour cream
- Fresh dill, for garnish
Instructions

In a large bowl, combine the grated potatoes, grated onion, beaten eggs, flour, baking powder, salt, and black pepper. Mix well to combine.

Heat a large skillet over medium-high heat and add enough vegetable oil to generously coat the bottom of the pan.

Take a handful of the potato mixture and shape it into a flat latke. Place it in the hot skillet and flatten it with a spatula.

Fry the latkes for about 3-4 minutes per side, until they are golden brown and crispy. Remove from the skillet and drain on paper towels.

Repeat the process with the remaining potato mixture, adding more oil to the skillet as needed.

Once all the latkes are cooked, arrange them on a serving platter. Top each latke with a piece of smoked fish and a dollop of sour cream.

Garnish with fresh dill and serve immediately.
