How To Make Baked Cod with Chorizo Crumb & Lemon Aioli

Ingredients
- 4 cod fillets
- 1/2 cup chorizo, finely chopped
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- 1 lemon, zested
- Salt and pepper, to taste
- for the lemon aioli:
- 1/2 cup mayonnaise
- 1 lemon, juiced
- 1 garlic clove, minced
Instructions

Preheat the oven to 375°F (190°C).

In a bowl, combine the chorizo, breadcrumbs, olive oil, lemon zest, salt, and pepper.

Place the cod fillets in a greased baking dish and top with the chorizo crumb mixture.

Bake for 15-20 minutes, or until the cod is cooked through and the topping is golden brown.

While the cod is baking, prepare the lemon aioli by whisking together the mayonnaise, lemon juice, and garlic in a small bowl.

Serve the baked cod with the lemon aioli on the side.
