How To Make Lemon Roast Chicken with Chorizo Stuffing
This dish features tender roasted chicken with a flavorful chorizo stuffing, infused with lemon for a citrusy twist.

Ingredients
- 1 whole chicken
- 200g chorizo, diced
- 1 lemon, zested and juiced
- 2 cloves of garlic, minced
- 1 onion, diced
- 2 tablespoons of olive oil
- Salt and pepper, to taste
Instructions

Preheat your oven to 375°F (190°C).

In a skillet, heat the olive oil over medium heat. Add the diced chorizo, minced garlic, and diced onion. Cook until the chorizo is browned and the onion is soft.

Remove from heat and stir in the lemon zest and juice. Set aside to cool slightly.

Stuff the chicken cavity with the chorizo mixture, then truss the chicken using kitchen twine to secure the legs and wings.

Place the stuffed chicken on a roasting pan, then season the chicken with salt and pepper.

Roast the chicken in the preheated oven for approximately 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) when tested with a meat thermometer.
