How To Make Cod, Cauliflower & Chorizo Mornay

Ingredients
- 4 cod fillets
- 1 small cauliflower, cut into florets
- 100g chorizo, sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 500ml milk
- 100g grated cheese
- Salt and pepper, to taste
Instructions

Preheat the oven to 180°C (350°F).

Place the cod fillets in a baking dish and season with salt and pepper. Bake for 15 minutes or until cooked through.

In a separate pan, heat the butter over medium heat. Add the chorizo slices and cook until crispy. Remove from the pan and set aside.

In the same pan, add the cauliflower florets and cook until tender. Remove from the pan and set aside.

In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux.

Gradually whisk in the milk, stirring constantly until the sauce thickens.

Remove the saucepan from the heat and stir in the grated cheese until melted and smooth.

Add the cooked cauliflower and chorizo to the sauce and mix well.

Place the baked cod fillets on a serving dish. Pour the cauliflower and chorizo mornay sauce over the top.

Serve hot and enjoy!
