How To Make Bacon Egg and Avocado Bagel Breakfast Sandwich

Each bite of this bagel breakfast sandwich consists of scrambled eggs, bacon, fresh tomatoes, hearty avocado, and red pepper flakes for a little spicy kick.

  • 1batchhomemade bagels
  • olive oil spray
  • 8large eggs,beaten
  • salt and pepper,to taste
  • 4slicescenter cut bacon,halved
  • 4slicesheirloom tomato,(thin slices)
  • 4ozhaas avocado,(1 small), sliced
  • red pepper flakes,optional


  1. Prepare the bagels as instructed and let them cool.

  2. Heat a large nonstick skillet over medium heat, spray with oil.

  3. Scramble the eggs with salt and pepper until they just set. Set aside.

  4. Prepare the sandwiches. Cut the bagels in half, and make the sandwiches by layering the eggs, bacon, tomato, avocado and red pepper flakes, if using. Eat right away.
