Ingredients

  • 6ozsweet potato
  • ¼cupwater
  • 1orange,peeled, segmented, and seeded
  • 1tbspraisins
  • 2tsplemon juice
  • 1tsphoney
  • pinchsalt
  • 4walnut halves,chopped

Instructions

  1. Place the sweet potato into a microwave steamer with a rack, then add water.

  2. Cook in the microwave for 8 minutes until the sweet potato is soft but not mushy. Set aside until cool enough to handle for about 5 minutes.

  3. Peel the cooled sweet potato, then cut into ½-inch cubes.

  4. Cut each orange segment into 3 pieces. Place the sweet potato and orange pieces in a bowl, then add the raisins.

  5. Mix the lemon juice and honey together in a bowl, then pour it over the potato-orange mixture.

  6. Add a pinch of salt and sprinkle walnuts over top. Serve, and enjoy!
