How To Make Sweet Potato and Orange Salad
Grab a bite of this tangy and sweet orange salad, tossed with tender sweet potatoes, and fruity raisins, for a tasteful light meal!

Ingredients
- 6ozsweet potato
- ¼cupwater
- 1orange,peeled, segmented, and seeded
- 1tbspraisins
- 2tsplemon juice
- 1tsphoney
- pinchsalt
- 4walnut halves,chopped
Instructions

Place the sweet potato into a microwave steamer with a rack, then add water.

Cook in the microwave for 8 minutes until the sweet potato is soft but not mushy. Set aside until cool enough to handle for about 5 minutes.

Peel the cooled sweet potato, then cut into ½-inch cubes.

Cut each orange segment into 3 pieces. Place the sweet potato and orange pieces in a bowl, then add the raisins.

Mix the lemon juice and honey together in a bowl, then pour it over the potato-orange mixture.

Add a pinch of salt and sprinkle walnuts over top. Serve, and enjoy!
