Ingredients
- 2 cans of tuna in water, drained
- 1 ripe avocado, diced
- 1 cup of frozen peas, thawed
- 1/4 cup of red onion, finely chopped
- 2 tablespoons of fresh lemon juice
- 1 tablespoon of extra virgin olive oil
- Salt and pepper, to taste
- 8 Baby Gem lettuce leaves
Instructions

In a large bowl, combine tuna, diced avocado, peas, and red onion.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour dressing over the tuna mixture and gently toss to coat.

Lay out the Baby Gem lettuce leaves and spoon the tuna salad onto each leaf.

Roll up the lettuce leaves, enclosing the filling. Secure with toothpicks if needed.
