Ingredients

  • 4 salmon fillets
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 4 sprigs of fresh dill
  • 4 slices of lemon
  • 1 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the salmon fillets with lemon juice, salt, and pepper.

  3. Place each salmon fillet on a sheet of foil.

  4. Top each fillet with a sprig of fresh dill and a slice of lemon.

  5. Fold the edges of the foil to create a packet, making sure it’s tightly sealed.

  6. Place the foil packets on a baking sheet and bake for 15 minutes, or until the salmon is cooked through.

  7. While the salmon is cooking, prepare the avocado mayo by mashing the avocado in a bowl.

  8. Stir in the mayonnaise, chopped fresh dill, lemon juice, salt, and pepper.

  9. Serve the foil-poached salmon with a dollop of avocado mayo on top.
