  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the grated carrots, sliced sugar snap peas, parsley, mint, and cilantro.

  2. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
