How To Make Quinoa-Stuffed Bell Peppers Recipe
Delicious and healthy stuffed bell peppers filled with a mixture of quinoa, veggies, and spices.
Serves:
Ingredients
- 4 large bell peppers, sliced in half and seeds removed
- 1 cup of cooked quinoa
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup of chopped fresh spinach
- 1 can of black beans, drained and rinsed
- 1/2 tsp of paprika
- 1/2 tsp of cumin
- Salt and pepper, to taste
- 1 tbsp of olive oil
- 1 cup of shredded cheddar cheese
- 1/4 cup of fresh parsley, finely chopped
Instructions

Preheat the oven to 375 F.

In a skillet, heat olive oil over medium-high heat, add onions and garlic, stir until onions are translucent.

Add the chopped spinach, black beans, paprika, cumin, salt, and pepper, cook for about 5 minutes.

Add the cooked quinoa, mix well.

Place the bell pepper halves in a baking dish.

Spoon the quinoa mixture evenly into the pepper halves.

Top each pepper with shredded cheese.

Cover the dish with foil and bake for 35 minutes.

Remove foil and bake for another 10 minutes until cheese is melted and bubbly.

Sprinkle chopped parsley on top and serve hot.
