- 1cupquinoa,uncooked
- 3cupsspinach,chopped
- 2cupsmandarine oranges
- 1cuppomegranate seeds
- ¼cuppistachios,coarsely chopped
- ¼cupfeta cheese,crumbled
- juice from one fresh lemon
- 1tbspapple cider vinegar
- 1tbspsugar
- 1tspgarlic,minced
- ½cupplain greek yogurt
- â…“cupextra virgin olive oil
- ½tspsalt
- ¼tspfreshly ground black pepper
Instructions

Cook quinoa according to package directions. Let the quinoa cool for 10 minutes.

In a large bowl combine quinoa, spinach, mandarine oranges, and pomegranate and lightly toss.

In a small bowl whisk together the lemon, apple cider vinegar, sugar, garlic, greek yogurt, olive oil, salt and pepper.

Drizzle desired amount on salad and toss. Top with pistachios and feta cheese.
