How To Make Warm Grain Salad with Bacon, Leeks & Spinach

Ingredients
- 1 cup of quinoa
- 4 slices of bacon, chopped
- 1 leek, sliced
- 2 cups of fresh spinach leaves
- 1/4 cup of dried cranberries
- 1/4 cup of chopped walnuts
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste
Instructions

Cook quinoa according to package instructions. Set aside.

In a large skillet, cook bacon over medium heat until crispy. Remove bacon from skillet and set aside, leaving the bacon drippings in the skillet.

Add leek slices to the skillet with bacon drippings and sauté until softened.

Add spinach to the skillet and cook until wilted.

In a large bowl, combine cooked quinoa, bacon, sautéed leeks and spinach, dried cranberries, and chopped walnuts.

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the salad and toss to coat.

Serve warm as a main dish or as a side to grilled meats or roasted vegetables.
