How To Make Purple Sprouting Broccoli, Jersey Royal, Burrata & Anchovy Salad

Ingredients
- 1 bunch of purple sprouting broccoli, trimmed
- 500g Jersey royal potatoes, halved
- 200g burrata cheese, torn into small pieces
- 8 anchovy fillets, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions

Fill a pot with water and bring to a boil. Add salt and cook the potatoes until tender, about 10-15 minutes. Drain and set aside.

In a separate pot of salted boiling water, blanch the broccoli for 3-4 minutes or until tender-crisp. Transfer to a bowl of ice water to cool. Drain well.

In a large mixing bowl, combine the potatoes, broccoli, burrata cheese, and anchovies. Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss gently to combine.

Divide the salad among serving plates and serve immediately.
