Ingredients
- 1 sheet of ready-made puff pastry
- 200g Jersey Royal potatoes, thinly sliced
- 50g wild garlic leaves, roughly chopped
- 100g watercress
- 1 red onion, thinly sliced
- 100ml white wine vinegar
- 1 tbsp sugar
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions

Preheat the oven to 180°C (350°F). Roll out the puff pastry onto a baking sheet lined with parchment paper.

Arrange the thinly sliced Jersey Royal potatoes evenly onto the pastry, leaving a border around the edges. Season with salt and pepper.

Sprinkle the wild garlic leaves and watercress over the potatoes.

In a small saucepan, heat the white wine vinegar and sugar until the sugar is dissolved. Add the thinly sliced red onion and let it pickle for 10 minutes.

Drain the pickled onion and scatter it over the tart.

Drizzle the tart with olive oil and bake in the preheated oven for 30-40 minutes, or until the pastry is golden and the potatoes are cooked through.
