Ingredients

  • 1 lb purple sprouting broccoli
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Trim the tough ends of the broccoli and place on a baking sheet.

  3. Drizzle with 1 tbsp olive oil and season with salt and pepper.

  4. Roast in the preheated oven for 12-15 minutes, or until tender and slightly charred.

  5. In a small bowl, whisk together the remaining olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to make the vinaigrette.

  6. Transfer the roasted broccoli to a serving dish and drizzle with the vinaigrette.

  7. Serve immediately.
