  • 1 pound purple sprouting broccoli
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped preserved lemon
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Trim the broccoli and place it on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.

  3. Roast in the preheated oven for 15-20 minutes, or until the broccoli is tender and starting to brown.

  4. Remove from the oven and sprinkle with crumbled feta and chopped preserved lemon.

  5. Serve hot with lemon wedges on the side.
