  • 4 cups of arugula
  • 2 medium-sized beets, cooked and sliced
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of chopped walnuts
  • 1/4 cup of balsamic vinaigrette
  • Salt and pepper to taste


  1. In a large bowl, mix together the arugula and sliced beets.

  2. Top the salad with crumbled feta cheese and chopped walnuts.

  3. Drizzle with balsamic vinaigrette and season with salt and pepper to taste.

  4. Toss the salad gently until all ingredients are evenly coated.
