How To Make Lentil and Vegetable Salad
This refreshing salad combines protein-packed lentils and colorful vegetables for a healthy meal.
Serves:
Ingredients
- 1 cup of green lentils
- 2 cups of water
- Salt and pepper to taste
- 2 tbsp of olive oil
- 2 tbsp of lemon juice
- 1 tsp of honey
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 carrot, grated
- 1/4 cup of chopped parsley
- 1/4 cup of chopped mint
- 1/4 cup of chopped cilantro
Instructions

Rinse lentils and add to a pot with 2 cups of water. Bring to a boil, then lower heat and simmer for 20 minutes or until tender.

Drain lentils and add to a large bowl.

In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make the dressing.

Pour dressing over lentils and toss to coat.

Add diced bell pepper, cucumber, and grated carrot to lentil mixture and toss.

Sprinkle with parsley, mint, and cilantro. Toss to combine and serve.
