Ingredients

  • 2 medium tomatoes, chopped
  • 1 small red onion, sliced
  • 1 medium cucumber, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup Kalamata olives
  • 4 oz feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine tomatoes, onion, cucumber, green pepper, and olives.

  2. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.

  3. Drizzle dressing over vegetables and toss to combine.

  4. Crumble feta cheese over salad and serve.
