Ingredients

  • 8 slices of smoked salmon
  • 1 large fennel bulb, thinly sliced
  • 1 cup of baby arugula
  • 1/2 cup of walnuts, chopped
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the fennel, arugula, walnuts, olive oil, lemon juice, salt, and pepper. Mix well.

  2. Lay out the smoked salmon slices on a clean surface.

  3. Spoon a generous amount of the fennel and walnut salad onto each slice of smoked salmon.

  4. Gently roll the smoked salmon into parcels and secure with toothpicks, if needed.

  5. Serve the smoked salmon parcels with an extra drizzle of olive oil and lemon juice, if desired.
