How To Make Smoked Salmon Parcels with Fennel & Walnut Salad

- 8 slices of smoked salmon
- 1 large fennel bulb, thinly sliced
- 1 cup of baby arugula
- 1/2 cup of walnuts, chopped
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions

In a large bowl, combine the fennel, arugula, walnuts, olive oil, lemon juice, salt, and pepper. Mix well.

Lay out the smoked salmon slices on a clean surface.

Spoon a generous amount of the fennel and walnut salad onto each slice of smoked salmon.

Gently roll the smoked salmon into parcels and secure with toothpicks, if needed.
