How To Make Fruity Couscous & Spiced Quail

Ingredients

  • 4 quails
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1 tsp ground cinnamon
  • 1 tsp turmeric
  • Salt to taste
  • 2 cups couscous
  • 1 cup orange juice
  • 1 cup chicken broth
  • Zest of 1 orange
  • 1 cup chopped dried fruits (apricots, raisins, and cranberries)
  • 1/2 cup chopped fresh mint leaves
  • 1/4 cup chopped fresh parsley leaves
  • 1/4 cup sliced almonds, toasted

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a small bowl, mix cumin powder, paprika, cinnamon, turmeric, and salt. Rub the spice mixture all over the quails.

  3. Place the quails on a baking sheet and roast in the preheated oven for about 20-25 minutes or until cooked through.

  4. In a saucepan, bring orange juice and chicken broth to a boil. Add couscous and orange zest, cover and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

  5. Stir in dried fruits, mint, and parsley into the couscous.

  6. Serve the roasted quails on a bed of fruity couscous, garnish with toasted almonds.
