How To Make Fruity Couscous & Spiced Quail

Ingredients
- 4 quails
- 1 tsp cumin powder
- 1 tsp paprika
- 1 tsp ground cinnamon
- 1 tsp turmeric
- Salt to taste
- 2 cups couscous
- 1 cup orange juice
- 1 cup chicken broth
- Zest of 1 orange
- 1 cup chopped dried fruits (apricots, raisins, and cranberries)
- 1/2 cup chopped fresh mint leaves
- 1/4 cup chopped fresh parsley leaves
- 1/4 cup sliced almonds, toasted
Instructions

Preheat oven to 400°F (200°C).

In a small bowl, mix cumin powder, paprika, cinnamon, turmeric, and salt. Rub the spice mixture all over the quails.

Place the quails on a baking sheet and roast in the preheated oven for about 20-25 minutes or until cooked through.

In a saucepan, bring orange juice and chicken broth to a boil. Add couscous and orange zest, cover and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

Stir in dried fruits, mint, and parsley into the couscous.

Serve the roasted quails on a bed of fruity couscous, garnish with toasted almonds.
