How To Make Lamb Chops with Fruity Couscous & Mint

Ingredients
- 8 lamb chops
- 1 cup couscous
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1/2 cup dried fruits (such as apricots, raisins, and cranberries)
- 1/4 cup chopped fresh mint leaves
- Salt and pepper to taste
Instructions

Preheat the grill or a grill pan over medium-high heat.

Grill the lamb chops for about 4-5 minutes per side for medium-rare, or until desired doneness.

While the lamb chops are grilling, prepare the couscous according to package instructions, substituting chicken broth for water.

Fluff the cooked couscous with a fork and add the dried fruits, chopped mint leaves, and olive oil. Mix well.

Serve the grilled lamb chops on a bed of fruity couscous and garnish with additional mint leaves.
