Serves:

Ingredients

  • 8 lamb chops
  • 1 cup couscous
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1/2 cup dried fruits (such as apricots, raisins, and cranberries)
  • 1/4 cup chopped fresh mint leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or a grill pan over medium-high heat.

  2. Season the lamb chops with salt and pepper.

  3. Grill the lamb chops for about 4-5 minutes per side for medium-rare, or until desired doneness.

  4. While the lamb chops are grilling, prepare the couscous according to package instructions, substituting chicken broth for water.

  5. Fluff the cooked couscous with a fork and add the dried fruits, chopped mint leaves, and olive oil. Mix well.

  6. Serve the grilled lamb chops on a bed of fruity couscous and garnish with additional mint leaves.
