How To Make Spiced Herb & Almond Couscous

Ingredients
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 tbsp olive oil
- 1/4 cup chopped almonds
- 1/4 cup chopped fresh herbs (such as parsley, mint, and cilantro)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp ground cinnamon
- Salt and pepper to taste
Instructions

In a pot, bring the vegetable broth to a boil.

Remove the pot from the heat and stir in the couscous. Cover and let it sit for 10 minutes.

In a skillet, heat the olive oil over medium heat.

Add the chopped almonds and cook until lightly toasted, stirring occasionally.

Add the fresh herbs, ground cumin, ground coriander, and ground cinnamon to the skillet. Cook for an additional minute.

Fluff the couscous with a fork and transfer it to a serving dish.

Pour the spiced herb and almond mixture over the couscous and toss to combine.

Season with salt and pepper to taste.
