How To Make Grilled Halloumi with Spiced Couscous

Ingredients
- 8 slices of halloumi cheese
- 1 cup of couscous
- 1 ½ cups of vegetable broth
- 1 tsp of ground cumin
- 1 tsp of ground coriander
- 1 tsp of paprika
- 1 tsp of garlic powder
- 1 tbsp of olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh mint leaves, for garnish
Instructions

Preheat grill to medium-high heat.

In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Allow it to sit for 5 minutes, then fluff with a fork.

In a small bowl, combine the ground cumin, ground coriander, paprika, garlic powder, olive oil, lemon juice, salt, and pepper. Mix well to make a marinade for the halloumi cheese.

Place the halloumi cheese slices on the grill and brush each side with the marinade. Grill for about 2-3 minutes per side, or until grill marks appear and the cheese softens.

While the cheese is grilling, heat a skillet over medium heat. Add the cooked couscous and remaining marinade to the skillet. Cook for 2-3 minutes, stirring occasionally, until the couscous is well coated and heated through.

Serve the grilled halloumi cheese over the spiced couscous. Garnish with fresh mint leaves and enjoy!
