Ingredients

  • 8 slices of halloumi cheese
  • 1 cup of couscous
  • 1 ½ cups of vegetable broth
  • 1 tsp of ground cumin
  • 1 tsp of ground coriander
  • 1 tsp of paprika
  • 1 tsp of garlic powder
  • 1 tbsp of olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat grill to medium-high heat.

  2. In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Allow it to sit for 5 minutes, then fluff with a fork.

  3. In a small bowl, combine the ground cumin, ground coriander, paprika, garlic powder, olive oil, lemon juice, salt, and pepper. Mix well to make a marinade for the halloumi cheese.

  4. Place the halloumi cheese slices on the grill and brush each side with the marinade. Grill for about 2-3 minutes per side, or until grill marks appear and the cheese softens.

  5. While the cheese is grilling, heat a skillet over medium heat. Add the cooked couscous and remaining marinade to the skillet. Cook for 2-3 minutes, stirring occasionally, until the couscous is well coated and heated through.

  6. Serve the grilled halloumi cheese over the spiced couscous. Garnish with fresh mint leaves and enjoy!
