How To Make Southern-fried Quail with Blue Cheese Dressing

Ingredients
- 4 quail, cleaned and split in half
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Vegetable oil, for frying
- 1 cup buttermilk
- 1/2 cup blue cheese, crumbled
- 1/4 cup mayonnaise
- 2 tbsp sour cream
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions

In a shallow dish, combine flour, salt, black pepper, paprika, and cayenne pepper. Mix well.

Heat vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).

Dip each quail piece in buttermilk and then dredge in the flour mixture, pressing firmly to adhere.

Carefully place quail pieces in hot oil and fry for 8-10 minutes or until golden brown and cooked through. Flip halfway through cooking.

Remove quail from oil and drain on paper towels.

In a small bowl, mash blue cheese until smooth. Add mayonnaise, sour cream, lemon juice, and minced garlic. Mix well. Season with salt and pepper to taste.

Serve fried quail with blue cheese dressing on the side.
