Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 2 cups cooked brown or white rice
  • 1 cup cooked lentils
  • 1/4 cup chopped mint
  • 1/4 cup chopped cilantro
  • 1/4 cup lemon juice
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground beef, breadcrumbs, parsley, onion, garlic, cumin, coriander, salt, black pepper, and cayenne pepper. Mix well until all ingredients are evenly combined.

  3. Shape the mixture into meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet lined with parchment paper.

  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and browned.

  5. Meanwhile, in a separate bowl, combine the cooked rice, lentils, mint, cilantro, lemon juice, and olive oil. Mix well to combine.

  6. Serve the meatballs on top of the mujadara, and garnish with additional chopped mint and cilantro, if desired.
