Ingredients

  • 8 oz pasta
  • 1 lb Italian sausage, sliced
  • 2 cups broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced black olives
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • Salt and pepper, to taste
  • dressing:
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet, cook the sausage slices over medium heat until browned and cooked through. Remove from skillet and set aside.

  3. In the same skillet, add the broccoli florets and sauté until tender-crisp, about 5 minutes.

  4. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.

  5. In a large bowl, combine the cooked pasta, sausage slices, sautéed broccoli, cherry tomatoes, black olives, Parmesan cheese, and basil. Pour the dressing over the salad and toss to coat evenly.

  6. Season with additional salt and pepper, if desired.

  7. Serve the warm sausage and broccoli pasta salad immediately.
