How To Make Beetroot, Bean & Feta Salad

Ingredients
- 4 medium beetroots, cooked and sliced
- 1 can of black beans, drained and rinsed
- 200g feta cheese, crumbled
- 1/2 red onion, thinly sliced
- 2 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

In a large bowl, combine the beetroot slices, black beans, feta cheese, and red onion.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

Pour the dressing over the salad and toss gently to combine.
