Ingredients

  • 4 medium beetroots, cooked and sliced
  • 1 can of black beans, drained and rinsed
  • 200g feta cheese, crumbled
  • 1/2 red onion, thinly sliced
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large bowl, combine the beetroot slices, black beans, feta cheese, and red onion.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  3. Pour the dressing over the salad and toss gently to combine.

  4. Garnish with fresh parsley.

  5. Serve chilled or at room temperature.
