Ingredients

  • 1 courgette, thinly sliced
  • 1 cup frozen peas
  • 1 cup Arborio rice
  • 2 cups vegetable broth
  • 1/2 cup cooked prawns
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil
  • Salt and pepper, to taste

Instructions

  1. In a microwave-safe dish, combine the courgette, peas, rice, vegetable broth, olive oil, garlic powder, dried basil, salt, and pepper.

  2. Cover the dish with microwave-safe cling film, leaving a small vent. Microwave on high for 5 minutes.

  3. Carefully remove the dish from the microwave and stir well.

  4. Re-cover the dish and microwave for another 5 minutes.

  5. Stir in the cooked prawns and grated Parmesan cheese. Microwave for an additional 3-5 minutes, or until the rice is cooked and the prawns are heated through.

  6. Let the risotto sit for a few minutes before serving to allow the flavors to meld together. Serve warm.
