How To Make Microwave Courgette and Pea Risotto with Prawns

Ingredients
- 1 courgette, thinly sliced
- 1 cup frozen peas
- 1 cup Arborio rice
- 2 cups vegetable broth
- 1/2 cup cooked prawns
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/4 tsp garlic powder
- 1/4 tsp dried basil
- Salt and pepper, to taste
Instructions

In a microwave-safe dish, combine the courgette, peas, rice, vegetable broth, olive oil, garlic powder, dried basil, salt, and pepper.

Cover the dish with microwave-safe cling film, leaving a small vent. Microwave on high for 5 minutes.

Carefully remove the dish from the microwave and stir well.

Re-cover the dish and microwave for another 5 minutes.

Stir in the cooked prawns and grated Parmesan cheese. Microwave for an additional 3-5 minutes, or until the rice is cooked and the prawns are heated through.

Let the risotto sit for a few minutes before serving to allow the flavors to meld together. Serve warm.
