Ingredients

  • 1 medium celeriac, peeled and julienned
  • 2 large carrots, peeled and julienned
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives

Instructions

  1. In a large bowl, combine the celeriac and carrots.

  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.

  3. Pour the dressing over the celeriac and carrots, tossing to coat evenly.

  4. Sprinkle with chopped parsley and chives.

  5. Serve chilled.
