How To Make Pedro Mexican Restaurante Chicken Mole Recipe
A classic Mexican dish that combines tender chicken in a rich, flavorful mole sauce.

Ingredients
- 4 chicken breasts, boneless and skinless
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp cinnamon
- 1/2 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper
- 2 cups chicken broth
- 1/2 cup tomato sauce
- 2 oz unsweetened chocolate, chopped
- 2 tbsp smooth peanut butter
- 1 tbsp honey
- Salt and pepper, to taste
Instructions

Preheat oven to 375°F.

Heat oil in a large Dutch oven over medium-high heat.

Brown chicken on both sides and transfer to a plate.

Add onion and garlic to the pot and cook until soft, about 5 minutes.

Add cumin, chili powder, cinnamon, coriander, smoked paprika, oregano, and cayenne pepper, and cook for 1 minute.

Add chicken broth, tomato sauce, chocolate, peanut butter, and honey, and stir to combine.

Add chicken back to the pot, cover, and transfer to the oven.

Bake for 1 hour and 15 minutes, or until chicken is cooked through and sauce has thickened.

Season with salt and pepper, to taste.

Serve hot with rice, tortillas, or your favorite side dish.
