How To Make Simple Roast Chicken

- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, cut into wedges
- 4 cloves of garlic, minced
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
Instructions

Preheat the oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the olive oil, salt, pepper, minced garlic, dried rosemary, and dried thyme.

Rub the mixture all over the chicken, including under the skin.

Place the lemon wedges inside the cavity of the chicken.

Place the chicken on a roasting pan or a baking sheet with a wire rack.

Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

Let the chicken rest for about 10 minutes before carving.
