How To Make All-in-one roast chicken & veg recipe

Ingredients
- 1 whole chicken (about 4 pounds)
- 4 large carrots, peeled and cut into chunks
- 1 large onion, peeled and cut into wedges
- 4 cloves of garlic, minced
- 2 sprigs of fresh rosemary
- 2 sprigs of fresh thyme
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
Instructions

Preheat the oven to 400°F (200°C).

Place the chicken in a large roasting pan. Rub the olive oil, salt, and pepper all over the chicken.

Arrange the carrots, onion, garlic, rosemary, and thyme around the chicken in the roasting pan.

Roast the chicken and vegetables in the preheated oven for 75 minutes, or until the chicken is cooked through and the vegetables are tender.

Remove the chicken from the pan and let it rest for 10 minutes before carving.

Serve the roast chicken with the roasted vegetables on the side.
