How To Make Roasted Red Potatoes, Onions, and Peppers

This 5-ingredient recipe makes the tastiest vibrant side dish combining roasted red potatoes, onions, and red peppers for a simple plate.

  • ¾lbred new potatoes
  • ½mediumred onion
  • 1redpepper
  • 2tbspolive oil
  • salt and freshly ground pepper,to taste


  1. Preheat oven to 350 degrees F.

  2. Toss all ingredients together and place in a roasting pan and cook for about 1 hour until golden brown. Toss the vegetables after a ½ hour. This allows them to caramelize in the pan.

  3. Serve and enjoy.
