  • 1.5 pounds of new red potatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Wash and dry the new red potatoes, then cut them into quarters.

  3. In a large bowl, combine the olive oil, garlic powder, dried thyme, salt, and black pepper. Mix well.

  4. Add the quartered potatoes to the bowl and toss until evenly coated with the seasoning mixture.

  5. Spread the potatoes in a single layer on a baking sheet.

  6. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.

  7. Remove from the oven and garnish with fresh parsley before serving.
