How To Make New Potato & Roasted Pepper Salad

Serves:

Ingredients

  • 1 pound new potatoes, halved
  • 2 bell peppers (red and yellow), sliced
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the new potatoes on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper.

  3. Roast the potatoes in the preheated oven for 20 minutes or until tender.

  4. In the meantime, place the sliced bell peppers and red onion on another baking sheet. Drizzle with the remaining olive oil and balsamic vinegar. Season with salt and pepper.

  5. Roast the peppers and onion in the oven for 15 minutes or until lightly charred.

  6. In a large bowl, combine the roasted potatoes, peppers, and onion. Toss gently.

  7. Sprinkle with fresh parsley and serve.
