How To Make Garlic Herb Crusted Roast Lamb
A combination of thyme, rosemary, and oregano adds beautiful flavors to this roast lamb. The meat is juicy, tender, and perfect for special dinners.

- salt and pepper
- 6lbslamb roast
- 1cupbutter,softened
- 5clovesgarlic,minced
- 1tbspthyme,finely chopped
- 1tbsporegano,finely chopped
- 1tbsprosemary,finely chopped
- 1tbspsea salt
- 1tsppepper
- 2lbsbaby potatoes
- 1tbspolive oil
- salt and pepper
Instructions

Preheat oven to 400 degrees F. Salt and pepper the lamb and set in the roasting dish.

In a small bowl mix butter, garlic, thyme, oregano, rosemary, salt and pepper. Rub all of the butter on the outside of the lamb.

In a roasting dish add the potatoes and toss with olive oil and salt and pepper. Lay the lamb roast on top of the potatoes.

Roast in the oven until the internal temperature reaches 145 degrees F. About 1½ to 2 hours. Remove the twine and serve.
