How To Make Maple & Chilli-Glazed Leg of Lamb

Ingredients
- 1.5 kg leg of lamb
- 3 tablespoons maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 2 cloves of garlic, minced
- 1 red chilli, finely chopped
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

In a small bowl, mix together the maple syrup, soy sauce, Dijon mustard, minced garlic, chopped chilli, dried rosemary, salt, and pepper.

Place the leg of lamb in a roasting pan and brush the maple-chilli glaze all over the lamb, ensuring it is evenly coated.

Roast the lamb in the preheated oven for 1 hour, basting with the glaze every 20 minutes.

After 1 hour, increase the oven temperature to 200°C (400°F) and roast for an additional 30 minutes, or until the lamb is cooked to your desired level of doneness.

Remove the lamb from the oven and cover loosely with foil. Let it rest for 10-15 minutes before carving.
