How To Make Roast Leg of Lamb Wrapped in Rosemary

Ingredients

  • 1 leg of lamb (about 3 lbs)
  • 3 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix together the olive oil, minced garlic, and chopped rosemary.

  3. Season the leg of lamb with salt and pepper.

  4. Rub the garlic and rosemary mixture all over the lamb, making sure to coat it evenly.

  5. Wrap the lamb in aluminum foil, making a tight seal.

  6. Place the lamb on a baking dish and roast in the preheated oven for 1 hour 30 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.

  7. Remove the lamb from the oven and let it rest for 10 minutes before carving.

  8. Serve the roast leg of lamb sliced, and drizzle with any juices left in the foil.
