Ingredients

  • 2 cups of basmati rice
  • 500g prawns, peeled and deveined
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • Salt to taste
  • 4 cups of water
  • Fresh cilantro leaves, for garnish

Instructions

  1. Rinse the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

  2. Heat oil in a large pot over medium heat. Add the cumin seeds and let them splutter.

  3. Add the onions, garlic, and ginger to the pot and sauté until the onions turn golden brown.

  4. Add the prawns and cook until they turn pink and are cooked through. Remove the prawns from the pot and set aside.

  5. In the same pot, add the soaked and drained rice. Sauté for 2 minutes to lightly toast the rice grains.

  6. Add the turmeric powder, garam masala, red chili powder, and salt to the pot. Mix well to coat the rice with the spices.

  7. Pour in the water and give it a quick stir. Bring the water to a boil, then reduce the heat to low, cover the pot, and let the rice simmer for 15-20 minutes until it is fully cooked and fluffy.

  8. Once the rice is cooked, fluff it with a fork and add the cooked prawns back into the pot. Gently mix to combine the prawns with the rice.

  9. Garnish with fresh cilantro leaves and serve hot.
