How To Make Spiced Prawn & Coconut Pilaf

Ingredients
- 2 cups basmati rice
- 1 lb prawns, peeled and deveined
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 cup coconut milk
- 2 cups vegetable broth
- Salt to taste
- Fresh cilantro, for garnish
Instructions

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 15 minutes, then drain.

In a large pan, heat some oil and sauté the chopped onion until translucent. Add the minced garlic and cook for another minute.

Add the prawns to the pan and cook until they turn pink and opaque. Remove the prawns from the pan and set aside.

In the same pan, add the ground cumin, coriander, turmeric powder, and red chili powder. Stir well to combine.

Add the drained rice to the pan and sauté for a couple of minutes, stirring constantly.

Pour in the coconut milk and vegetable broth. Season with salt to taste. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and cooked through.

Once the rice is cooked, fluff it up with a fork and gently stir in the cooked prawns. Cover the pan and let it sit for a few minutes to allow the flavors to meld together.

Serve the spiced prawn and coconut pilaf garnished with fresh cilantro.
