Ingredients

  • 1 lb (450g) prawns, peeled and deveined
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 4 clementines, peeled and segmented
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1 jalapeno pepper, seeded and minced (optional)

Instructions

  1. In a small bowl, mix together the paprika, cumin, cayenne pepper, black pepper, and salt.

  2. Coat the prawns evenly with the spice mixture.

  3. Heat the olive oil in a large skillet over medium-high heat.

  4. Add the prawns to the skillet and cook for 2-3 minutes on each side, until they turn pink and opaque.

  5. In a separate bowl, combine the clementines, red onion, cilantro, lime juice, and jalapeno pepper.

  6. Serve the blackened prawns with the clementine salsa on the side.
